Vegan Chocolate Chip Cookies

Ingredients
  • 1 cup white or oat flour
  • 1/4 cup of brown or coconut sugar
  • pinch of salt
  • 1/3 cup of chocolate chips
  • 2 tbsp of milk 
  • 1/4 cup of sugar
  • 2 tbsp of oil
  • 1/4 tsp of vanilla extract
  • 1/2 tsp of baking soda

Method

In a bowl, mix all the dry ingredients, vanilla essence and oil until you get a cookie dough. Or else you can use a dough mixture to get the job done. If it is too dry add some milk to it to keep it's moisture. Now make a big ball and refrigerate for about couple of hours. Preheat the oven to 325 F. Then make some small cookie balls out of the large dough ball which has been refrigerated before and place them on a greased baking tray, leaving enough room between cookies for them to spread. Now bake them until you get perfect cookies.


Pumpkin Chocolate Chip Cookies

Ingredients
  • 1 cup of butter, softened
  • 1 cup of white sugar
  • 1 cup of brown sugar
  • 1 tspn of cinnamon powder
  • 1/2 tspn of ginger
  • 1 tspn of vanilla extract
  • 1 cup of canned pumpkin puree
  • 3 cups of white flour
  • 2 tspn of baking soda
  • 2 large eggs
  • 1/4 tspn of ground nutmeg
  • 1/4 tspn of ground cloves
  • pinch of salt
  • 2 cups of milk chocolate chips, not semisweet

Method

Beat the butter, white and brown sugars until the mixture is smooth, light and fluffy. Beat in the eggs 1 at a time. Mix the vanilla and pumpkin puree. Then whisk flour, baking soda, salt, cinnamon, ginger, nutmeg and cloves in a bowl. Slowly beat the flour mixture into the batter in thirds. Then add some chips and mix it. Don't forget to preheat the oven to 350 degrees. Scoop the cookie dough onto the cookie sheets which already prepared with nonstick spray. Then until the cookies are browned around the edges. Serve after they cool down on the rack.


Cinnamon Sugar Pillow Cookies

Ingredients
  • 1 1/2 cups of white, or oat flour
  • 1/2 tsp of baking powder
  • 6 tbsp  oil or melted buttery
  • 1 1/2 tbsp or milk
  • 1 tsp of vanilla extract
  • 3/4 tsp of baking soda
  • pinch of salt
  • 1/2 cup of sugar
  • equal parts of cinnamon and sugar for coating

For the filling 
  • 4 tsp of powdered sugar 
  • 1/4 cup of cream cheese 

Method

In a bowl, combine all the dry ingredients and stir well. Then add oil, milk along with vanilla to form the cookie dough. In case, if the dough is dry you can add some milk. Now make some small balls out of the dough and break each balls into half. Make the filling by beating both sugar with cream cheese until it smooth. Then flatten those half a bit and add a little filling to one half, then place the other half on top and re-roll. Let them chill for about 30 - 40 minutes. Preheat oven to 325 F. Roll balls in cinnamon and sugar mixture. After that you can place them place on a baking tray and bake until the they cook. Now ready to enjoy the yummy pumpkin cookies.
