INGREDIENTS

    For the Crust:
    • 2 cups graham cracker crumbs
    • 1/4 cup granulated sugar
    • 1/2 cup unsalted butter, melted

    For the Gingerbread Cheesecake Filling:
    • 24 ounces cream cheese, softened
    • 1 cup granulated sugar
    • 1/4 cup molasses
    • 3 large eggs
    • 1 teaspoon vanilla extract
    • 1 tablespoon ground ginger
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon ground cloves
    • 1/4 teaspoon nutmeg
    • 1/4 teaspoon salt

    For the Gingerbread Whipped Cream:
    • 1 cup heavy cream
    • 2 tablespoons powdered sugar
    • 1/2 teaspoon ground ginger
    • 1/4 teaspoon ground cinnamon

    RECIPE

    1. Preheat your oven to 325°F (165°C). Grease a 9-inch springform pan.

    2. In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Press the mixture into the bottom of the prepared pan to form the crust. Set aside.

    3. In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth and creamy. Add the molasses, eggs, vanilla extract, ground ginger, ground cinnamon, ground cloves, nutmeg, and salt. Beat until well combined and smooth.

    4. Pour the gingerbread cheesecake filling over the crust in the springform pan. Smooth the top with a spatula.

    5. Bake the cheesecake in the preheated oven for about 55-60 minutes, or until the edges are set and the center is slightly jiggly.

    6. Remove the cheesecake from the oven and let it cool in the pan for 10 minutes. Then, run a knife around the edges to loosen the cheesecake from the pan. Allow it to cool completely at room temperature, then refrigerate for at least 4 hours or overnight.

    7. In a mixing bowl, combine the heavy cream, powdered sugar, ground ginger, and ground cinnamon for the gingerbread whipped cream. Beat until soft peaks form.

    8. Just before serving, remove the chilled gingerbread cheesecake from the springform pan. Pipe or spread the gingerbread whipped cream on top of the cheesecake.

Slice and serve this Gingerbread Cheesecake as a show-stopping dessert for your Christmas celebration. The creamy and spiced gingerbread filling pairs perfectly with the buttery graham cracker crust, creating a decadent and festive treat. The addition of the gingerbread whipped cream adds a delightful touch of flavor and elegance. Enjoy the rich and comforting taste of gingerbread in every luscious bite.
