INGREDIENTS

  • 1 fully cooked bone-in ham (8-10 pounds)
  • 1 cup honey
  • 1/2 cup brown sugar
  • 1/4 cup Dijon mustard
  • 1/4 cup pineapple juice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves

For the Cranberry Sauce:

  • 2 cups fresh cranberries
  • 1 cup granulated sugar
  • 1 cup water
  • Zest and juice of 1 orange

RECIPE

1. Preheat your oven to 325°F (165°C).


2. In a small bowl, combine the softened butter, chopped sage, thyme, rosemary, salt, and pepper. Mix well to create the herb butter.


3. Rinse the turkey inside and out, then pat it dry with paper towels. Place the turkey on a rack in a roasting pan.


4. Carefully loosen the skin of the turkey by gently sliding your fingers between the skin and the meat, being careful not to tear the skin. Spread the herb butter evenly under the skin, covering as much of the turkey as possible.


5. Season the outside of the turkey with salt and pepper. Tie the turkey legs together with kitchen twine for even cooking.


6. Pour the chicken or turkey broth into the bottom of the roasting pan. This will help keep the turkey moist during cooking.


7. Place the turkey in the preheated oven and roast for about 3 to 3 ½ hours, or until the internal temperature reaches 165°F (74°C) when measured in the thickest part of the thigh. Baste the turkey with the pan juices every 30 minutes.


8. While the turkey is roasting, prepare the cranberry sauce. In a saucepan, combine the cranberries, sugar, water, orange zest, and orange juice. Bring to a boil over medium heat, then reduce the heat and simmer for about 10-15 minutes, or until the cranberries burst and the sauce thickens slightly. Remove from heat and let it cool.


9. Once the turkey is cooked, remove it from the oven and let it rest for about 20-30 minutes before carving. This allows the juices to be redistributed and ensures a moist and tender turkey.
