Shrimp and Avocado Salad

Ingredients
  • 1 pound frozen cooked shrimp
  • 1 cup of thinly sliced celery 
  • 2 tbsp of Italian salad dressing 
  • 4 tbsp of mayonnaise 
  • salt and pepper to taste 
  • 1 ripped avocado 
  • few drops of lemon juice

Method

Combine the shrimp, celery, Italian dressing and mayonnaise. Season to taste with salt and pepper. Chill, covered until ready to serve. Make sure to add and mix the salad with diced avocado with few drops of lemon juice before you serve the salad.

Cucumber Salad

Ingredients
  • 3 large cucumbers, thinly sliced 
  • 1 1/4 cups of red wine vinegar 
  • 1/2 tbsp of celery salt 
  • 1/2 head of lettuce, shredded 
  • 1 tbsp of honey 
  • pinch of black pepper 
  • 1/2 tbsp of chopped fresh dill  
  • 4 tbsp of olive oil 
  • 1 tbsp of Dijon mustard

Method

Cucumber is summer food and it contains lots of water. So having cucumber during this hot weather absolutely help you to stay hydrated. Just toss all the ingredients thoroughly in a large salad bowl. Then enjoy the salad mixture after letting it chill for 2 hours.


Lime Jello Cottage Cheese Salad

Ingredients
  • 1 - 3 ounce package lime jelly powder 
  • 1 cup boiling water 
  • 1/2 cup of cold water 
  • 1 tbsp of vinegar or lemon juice 
  • 1/2 cup of mayonnaise 
  • salt and pepper to taste 
  • 3/4 cup of  chopped celery 
  • 1/2 chopped onion
  • 1/2 chopped green pepper

Method

Blend with beater and chill until firm 1" from edge of dish. Turn it into a bowl and beat it until it becomes light and fluffy. Fold in 1 cup cottage cheese, celery, onion and green pepper. Chill fully before serving.
