Red velvet is distinguished from chocolate cupcakes by its delightfully buttery flavor. Swirls of fluffy cream cheese icing adorn this eye-catching scarlet-colored cupcake version of the famous silky and delicate Red Velvet Cake. It tastes like a cross between vanilla and chocolate cupcakes. With fluffy cream cheese icing, it loves to be the center of attention!

Ingredients

  • 1 and 1/3 cups all-purpose flour
  • 2 large eggs
  • 1/4 cup cornstarch
  • 1/2 teaspoon baking soda
  • 4 teaspoons unsweetened cocoa powder
  • 1/4 cup unsalted softened butter
  • 1 cup granulated sugar
  • 1/2 teaspoon distilled white vinegar
  • red food coloring
  • 1/2 cup buttermilk
  • pinch of salt
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract

Method

1. To begin with, preheat the oven to 350°F (177°C).

2. Line muffin pan with cupcake liners.

3. Then you have to carefully separate egg yolks from egg whites. For that purpose, you can also use an egg yolk separator as it makes things easier. 

4. Beat 2 egg whites on high speed in a bowl until soft peaks form and set aside.

5. Whisk flour, baking soda, cocoa powder, cornstarch, and a pinch of salt together until they are evenly combined and set aside.

6. Then beat (on high speed) the butter and sugar until they become smooth and creamy.

7. Afterward,  add the oil and beat for a couple of minutes. They may not completely mix well with the oil but it is OK.

8. Subsequently you can add the 2 egg yolks to this mixture and beat (medium-high speed) until they are incorporated. Later add vinegar, vanilla, red food coloring, and buttermilk.

9. Next, you have to fold the whipped egg whites into this cupcake batter with a silicone cake spatula or using a wooden spatula.  

10. Now you can spoon the silky and smooth cake batter into cupcake liners filling 1/2 – 2/3 of the way full. Bake this for 20-21 minutes or until a toothpick inserted in the center comes out clean.

11. To keep the moisture in the cupcake don’t overbake. Once it is completely baked transfer them to a rack to cool completely before frosting as warm cupcakes will melt the frosting.

12. Prepare the cream cheese frosting and garnish the top of your cupcakes. You can style your cupcakes as you prefer.
