INGREDIENTS

    For the Gingerbread Cookies:
      • 3 cups all-purpose flour
      • 1 teaspoon baking soda
      • 1/2 teaspoon salt
      • 2 teaspoons ground ginger
      • 1 teaspoon ground cinnamon
      • 1/2 teaspoon ground cloves
      • 1/2 cup unsalted butter, softened
      • 1/2 cup granulated sugar
      • 1/2 cup molasses
      • 1 large egg
      • 1 teaspoon vanilla extract

                          For the Cream Cheese Filling:
                            • 8 ounces cream cheese, softened
                            • 1/2 cup unsalted butter, softened
                            • 3 cups powdered sugar
                            • 1 teaspoon vanilla extract

                            RECIPE

                            1. In a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, and cloves. Set aside.

                            2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the molasses, egg, and vanilla extract, and mix until well combined.

                            3. Gradually add the dry ingredients to the wet ingredients, mixing until the dough comes together. Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for at least 1 hour.

                            4. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.

                            5. On a lightly floured surface, roll out one disk of dough to about 1/4-inch thickness. Use cookie cutters to cut out desired shapes. Place the cookies onto the prepared baking sheets, spacing them about 1 inch apart.

                            6. Bake the cookies for 8-10 minutes, or until the edges are lightly golden. Remove from the oven and let them cool on the baking sheets for a few minutes, then transfer to a wire rack to cool completely.

                            7. In a mixing bowl, beat the softened cream cheese and butter until smooth and creamy. Gradually add the powdered sugar and vanilla extract, and continue to beat until well combined.

                            8. Once the cookies are completely cooled, spread a generous amount of the cream cheese filling onto the bottom side of one cookie. Top with another cookie to create a sandwich. Repeat with the remaining cookies.
